Cookies

Recently, I made two very bad batches of cookies. Brandon will say it is because I tried to substitute healthier items in place of oil and sugar. This is just simply not the truth and I maintain that my coconut oil brownies are tropically tasty! I had made salted toffee chocolate chip cookies and failed to put the proper amounts of brown and white sugar in. FYI, if you are going to forget a sugar, don't let it be the brown one! The following week I made soft sugar cookies and used baking soda instead of baking powder and then tossed in a little extra baking powder at the end to make up for it. Bad idea. But the family was extremely kind and did not say "mom why do these taste so bad?" They just simply sat and no one ate them. One night after dinner I take a moment to thank them for being so kind and acknowledge that the recent cookies have not been the best. They should have said "that's ok mom!" and we could have moved on, but they didn't. Instead they took this open window and unleashed all of their complaints about my baking! Now I know I can bake and so the only solution was to make them so many good cookies that it made their heads spin! So after buying a lot of butter and sugar, I spent the next afternoon baking everyone's favorite. Grant: Texas Sheet Cake Cookies (which he didn't even know there was a Texas Sheet Cake until Ima brought one over for dessert recently and you could see bells going off!) Elizabeth: Salted Toffee Chocolate Chip. Brandon: Oatmeal Scotties, which was no small task because our local grocery clerk informed me that butterscotch chips are seasonal. (WHAT?! I am certain butterscotch chips are meant to be enjoyed year round and I am also certain that I do enjoy them year round...straight out of the bag!)
Mission accomplished. Cookies Baked. They might have been the best ever.
